    • Get a “fast read” thermometer – Heat water, turn nut to calibrate
    • Blanch a tomato: drop in boiling water 20 seconds – then ice water
    • Ginger: Grate finely, then squeeze – Measure 1:1 (e.g. 1 tsp)
    • Garlic: Crush with bottom of drinking glass, then remove peel
    • Chicken: Pat dry before cooking and it will brown better

This was actually compiled before I ever even thought of writing a cookbook. Back in September 2006 I published all of my recipes into a PDF document which I could take with me traveling. This particular document contains a lot of recipes that I converted to PDF at some point in time.
